Basil Garlic Chicken Nuggets


 



I run into multiple challenges when it comes to food for my kids:

1. Is is good?

2. Is it healthy?

3. Does it meet all dietary restrictions?

4. Are they actually going to get full?

5. How long does it take to make it?


#4 may seem funny but, as a mom with 3 boys, it is my life. 

There is a time and a place for slow food, but I don't want to make slow food 3 times a day.

Today's adventure includes helping my boys learn to ride their big boy bikes.





And go on walks morning and evening with my daughter and our dogs.





This recipe fits the bill on all fronts. It uses one of my favorite kitchen gadgets, the Ninja Foodi. And, lest you think that I'm one of those moms who always knows what she's going to make, the chicken was still pretty frozen when I started cutting it. I decided to make this about 30 minutes before I did it.

add tigernut flour, spices, and sea salt


add to basket for air fryer

Without further ado, here's the recipe:

2 lbs chicken breast
1/3 cup tigernut flour
2 tsp freeze dried basil
3/4 tsp salt
1 tsp garlic powder

1. Cut chicken breast into bite size pieces
2. Add 1/3 cup tigernut flour and spices and stir
3. Add to basket for air fryer
4. Cook on 390 for 30 minutes, stirring every 10 minutes

This makes about 7 servings with each serving having approximately 12 nuggets.

With organic chicken, the cost per serving was about

$2.14
